Ingredients
4 large eggs
2 flour tortillas (8-inch size)
Β½ cup shredded cheese (cheddar, mozzarella, or your favorite)
ΒΌ cup milk
ΒΌ cup chopped bell pepper
ΒΌ cup chopped onion
Salt and pepper, to taste
Optional: cooked bacon or sausage, spinach, or hot sauce
Directions
- Preheat oven to 375Β°F (190Β°C).
- Grease a small baking dish (8Γ8 or similar).
- Tear the tortillas into pieces and place them evenly in the dish.
- Sprinkle cheese, peppers, and onions (and any extras) over the tortillas.
- n a bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the tortilla layer in the dish.
- Bake for 25β30 minutes, or until the eggs are set and the top is golden.
