Ingredients
4 Italian sausages (mild or spicy)
3 bell peppers (red, yellow, green), sliced
1 large red onion, sliced
2–3 medium potatoes, cubed
2 tablespoons olive oil
1 teaspoon Italian seasoning
½ teaspoon garlic powder
Salt and pepper to taste
Directions
- Preheat oven to 400°F (200°C).
- Line a large baking sheet with parchment paper or foil.
- In a bowl, toss potatoes, peppers, and onions with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Spread veggies on the baking sheet. Place sausages on top or to the side.
- Bake for 25–30 minutes, turning everything halfway through.
- Sausages should be browned and cooked through (internal temp 160°F / 71°C).
- Serve hot, straight from the pan!
