Ingredients
1 tri tip roast (2–3 pounds)
2 tablespoons olive oil
1 tablespoon salt
1 tablespoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Wood chips (hickory, oak, or cherry)
Directions
- Pat the tri tip dry with paper towels.
- In a small bowl, mix the salt, pepper, garlic powder, onion powder, and paprika.
- Rub the roast with olive oil, then coat it with the spice mix.
- Preheat your smoker to 225°F (107°C) and add wood chips.
- Place the tri tip in the smoker and cook for about 1.5 to 2 hours, or until internal temp reaches 135°F (57°C) for medium-rare.
- Remove the roast and let it rest for 10–15 minutes.
- Slice thinly against the grain and serve warm.
