Ingredients
6 boneless, skinless chicken thighs
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon garlic powder
1 teaspoon paprika
Β½ teaspoon salt
Β½ teaspoon black pepper
Optional: chopped fresh parsley or lemon wedges for serving
Directions
- In a bowl or zip-top bag, combine olive oil, lemon juice, and all seasonings.
- Add chicken thighs and toss until well coated. Let marinate for 15β30 minutes (or overnight for more flavor).
- Preheat your grill (medium-high heat) and lightly oil the grates.
- Place chicken thighs on the grill and cook for 5β7 minutes per side, or until the internal temperature reaches 165Β°F (75Β°C).
- Remove and let rest for 5 minutes.
- Serve warm, or slice for meal prep bowls, wraps, or salads.
Notes
- You can also use bone-in thighs, but cooking time may be longer.
Store leftovers in the fridge for up to 4 days.
