Ingredients
1 cup all-purpose flour
1 tablespoon brown sugar
1 teaspoon baking powder
Β½ teaspoon baking soda
Β½ teaspoon cinnamon
ΒΌ teaspoon nutmeg
ΒΌ teaspoon salt
ΒΎ cup milk
Β½ cup canned pumpkin puree
1 large egg
2 tablespoons melted butter
Β½ teaspoon vanilla extract
For the Cream Cheese Glaze:
2 oz cream cheese, softened
2 tablespoons powdered sugar
2 tablespoons milk
Β½ teaspoon vanilla extract
Directions
- In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix milk, pumpkin puree, egg, melted butter, and vanilla.
- Combine wet and dry ingredients, stirring until just mixed. Donβt overmix.
- Heat a nonstick pan or griddle over medium heat and lightly grease it.
- Pour about ΒΌ cup of batter for each pancake and cook 2β3 minutes per side, until golden.
- For the glaze, whisk all glaze ingredients in a small bowl until smooth.
- Drizzle cream cheese glaze over warm pancakes and enjoy!
