Ingredients
2 cups cooked shredded or chopped chicken (grilled or rotisserie)
1 large ripe peach, thinly sliced
¼ cup chopped fresh basil leaves
½ cup shredded carrots
½ cup thinly sliced cucumber
¼ cup chopped red bell pepper
8 rice paper wrappers
Salt & pepper, to taste
Optional dipping sauce: sweet chili, peanut sauce, or a light vinaigrette
Directions
- Prepare ingredients and place them in bowls for easy assembly.
- Fill a shallow bowl with warm water. Soak one rice paper wrapper for 10–15 seconds until soft.
- Lay the wrapper flat on a clean surface.
- In the center, layer chicken, peach slices, basil, carrots, cucumber, and bell pepper. Sprinkle with a little salt and pepper.
- Fold the sides, then roll tightly from the bottom up like a burrito.
- Repeat with remaining wrappers and ingredients.
- Serve fresh, whole or sliced in half, with your favorite dipping sauce.
